granola recipe

I got into making granola because I was looking for a nutritious and quick breakfast in the mornings. I found this great granola recipe on a food blog (great pics and videos). I just sprinkle some on top of my plain lowfat yogurt, add some fresh fruit (like ripe white peaches) and I’m good to go. Great balanced breakfast with calcium, fiber, and whole grain. This is my tweaking of a basic granola recipe. You can play around with it and add dried cranberries, coconut flakes, you get the idea.

homemade granola
makes about 3 cups
3 cups oats (old-fashioned)
1/4 cup dark brown sugar
1/4 cup honey
1/4 cup vegetable oil
1 teaspoon vanilla extract
½ tsp cinnamon
3/4 cup toasted pecans, chopped
½ cup golden raisins

Preheat the oven to 350 F. Mix the oats, brown sugar, honey and oil together in a mixing bowl (tip: pour the honey into the oil for no sticky mess). Add the cinnamon, vanilla, and pecans, mix, and pour onto a cookie sheet covered in aluminum foil. Spread over the entire cookie sheet and put in the oven for ten minutes. Remove the cookie sheet and with a spatula, break up the granola, flipping pieces over to let the sides brown. Return to the oven for another 5 minutes.  Add the golden raisins (if you add it earlier, they’ll burn) and bake for 5 more minutes or until golden brown. Let the granola cool for about 10 minutes, then gently break it up using the back of a spoon.
