My new friend, Rebecca, learning that I like to cook asked me if I could teach her how to make something. I was flattered! Of course, flattery turned into uncertainty. What would I teach her to make? Pasta came to mind. Simple food that’s oh-so-good. She came over recently and we made this pasta dish with sausage, mozzarella cheese, tomatoes, and spinach. We had a lot fun and here’s the proof (see picture below). Btw, what I love about pasta dishes is that you can swap out ingredients based on what’s in your fridge. I recommend having a balance of a protein, veggie(s), and a type of cheese.
sausage, spinach, tomato, fresh mozzarella pasta (adapted from week of menus)
1 lb of penne pasta
4-6 sausages, sliced
4 TB of olive oil
8 cloves of garlic, minced
3/4 cup of chicken stock
3 cups of spinach
1 1/2 cups of cherry/grape tomatoes
1 lb fresh mozzarella balls or 1 inch squares
Parmesan cheese for sprinkling
Crushed red pepper
1. Boil water for pasta. Prepare pasta according to package directions. Drain and set aside.
2. Preheat your oven (I used my toaster oven) to 400F for about 5 mins. Place the tomatoes on a baking sheet/tray and add 1 TB of olive oil and pinches of salt and pepper. Roast for about 8 minutes or when they start bursting (you’ll hear a hissing sound).
3. In the same pot used for cooking pasta, over medium heat, add olive oil and sausages. After sausages are browned, add garlic. Cook for 1 minute until fragrant. Dump in cooked pasta, chicken stock, tomatoes, spinach and mozzarella. Turn the heat down low and gently toss ingredients together until the spinach is wilted, mozzarella is slightly melted and all pasta is coated with chicken stock and olive oil, about 2 minutes.
3. Sprinkle with crushed red pepper and Parmesan cheese and enjoy!
