flatbread pizza

I love no-brainer weeknight meals. You come home from a long day and the last thing you want to do is think about cooking but you’re hungry and don’t want to settle for fast food/convenience foods and not compromise on fresh flavors and ingredients. Flatbread pizza has been my answer to that conundrum. I’ve been munching on Trader Joe’s Middle Eastern flatbread. It’s easy and you can use whatever ingredients you have on hand. Perfect for warm nights where you don’t want to turn on the stove or oven (just need the toaster oven).

flatbread pizza
flatbread rounds
sauce (pesto or tomato sauce)
shredded mozzarella cheese
a protein (chicken, bacon, etc)
preferred toppings

Toast the flatbread by itself in the toaster oven for about 5 minutes. Take it out and spread your base. Place your toppings and pop in the toaster oven until the cheese is melted (about 10 minutes). A spinach salad with strawberries and bacon and a glass of white wine would make this meal complete. Enjoy!

    I am addicted to Trader Joe’s flatbread. I almost always have a package in the freezer. It goes with so many things. And makes a great pizza, as you just demonstrated. 😉
